The Sheraton Saigon Hotel & Tower in Ho Chi Minh city is hosting a Shanghai Food Festival all day at the Saigon Café until July 2.
It features Shanghai cuisine cooked by two guest chefs from Starwood, Le Royal Meridien Shanghai: Jackie Chen and Allan Li.
Signature dishes like braised pork belly with soya sauce, fried rice with egg Shanghai style and fried noodles Shanghai style as well as many other dishes particular to the city will tickle customers' palates during the festival.
On July 1, the chefs will put in a live performance of their culinary skills.
Allan Li told Vietweek that the unique flavor of Shanghai cuisine is the combination of sweet and sour tastes. Shanghai cuisine typically uses white vinegar, black vinegar, dried chilli and sugar, he said.
"On this occasion we offer both authentic and modern Shanghai dishes," Li said.
He said fish head soup is one of the most popular dishes in Shanghai.
He also said the Chinese government now encourages chefs to cook traditional food with less oil to make the cuisine healthier.
