Flavors of CochinChina

Saigon was once the capital of CochinChina, the French colonial region of Southern Vietnam, where the European influence is evident in a unique use of ingredients and cooking methods.

Day 1 The art of claypot

Set off to Binh Duong to learn the ancient art of making clay pots, unique unglazed vessels in which a variety of dishes are cooked by steam. With your craftsmanship in hand, return to Saigon for a master class in clay-pot cooking, crafting cơm tấm (broken rice), caramelized pork belly, and river prawns in coconut water.

 Day 2 Bánh mì and brews

The day begins in the kitchen with the Park Hyatt baker, learning to make the perfect baguette, the foundation for the deliciously simple, yet satisfying, bánh mì. The filling is what gives this Vietnamese sandwich its multiple personalities, so you will experiment with four traditional ones: egg, pork, chicken, and beef. The culmination of this culinary experience pairs your savory creations with a tasting of several Vietnamese micro-brewed beers.

Day 3 Green afternoon tea

Taste a master selection of Vietnam's high-grade green teas, including the native lotus tea, along with a decadent array of sweet "green" confections. Master Pastry Chef Eng, reveals the secrets to preparing and pairing these dainty delicacies.
