A rice flour manufacturer is preparing to make some record-breaking banh xeo this holiday season.
The traditional Vietnamese pancake will come in at a whopping 10 kilograms -- 2kg of flour and 8kg of pork, duck meat, shrimp, carrots and local herbs.
Five skilled cooks have been working together over a two-meter, 35kg pan to prepare for these behemoths.
“We have been practicing for months to make sure the end-product would have this perfect crisp,” said Vu Thi Huong, deputy head of the Intermix rice flour company.
“The banh xeo we just made was so large, it made it tough to adjust the heat, the quantity of oil, and to take the finished cake out of the pan without tearing it.”
It took half an hour to finish the job, Huong added.
The huge pancake is expected to set a new record in Vietnam Guinness book next Thursday, as the biggest banh xeo ever made in the country.

Another record is expected to be set -- the biggest number of cooks that gather to make a banh xeo --- on the same day, as 40 cooks are expected to join the event at Binh Dien Tet Flower Market in District 8.
The cooks will continuously serve free rations for visitors of the market throughout the four-day event.
Visitors could come to see and taste the “sizzling cake”, named for the loud sizzling sound it makes when the rice batter is poured into the hot skillet, at the market on Nguyen Van Linh Street, from February 12-15.
