Where to find authentic Italian dishes in Ho Chi Minh City

In many countries in Western Europe, pasta is served as a main dish, starter, soup or even dessert in daily meals. The high quantity of starch makes one feel full for a long time, and no meal can seem as satisfying as a properly cooked Italian supper. But where can you find authentic Italian cuisine in Ho Chi Minh City, made by a real chef that understands that alfredo sauce is not made with condensed milk?

There are two basic kinds of pasta: dried and fresh. Fresh pasta can be kept for a few days under refrigeration. Dried pasta is more popular because it can be stored for up to two years.  However, the best pasta and sauces have to be made the Italian way, from scratch that morning. The sauce must simmer for several hours fusing all the flavors of Italian olive oils, fresh garlic, onion and spices. Italian chef Michele Gulizzi is doing just that and is bringing fresh authentic pasta to District 1. At Opera, the restaurant located inside Park Hyatt Saigon Hotel, Gulizzi is cooking up Italian classics from scratch like pappardelle, osso bucco ragout with shaved parmesan, classic lasagna emiliana, beef bolognese, and bucatini as well as your personal favorite choice from a selection of traditional pasta with choice of sauce - AOP, arrabbiata, pomodoro, pesto, puttanesca amatriciana or bolognese.

Pasta comes in a variety of different shapes that serve for both decoration and to act as a carrier for the different types of sauce. Some Italian restaurants are able to bring out the art and presentation of pasta, with beautiful and eye-catching shapes such as long or short thread, thin or thick thread, seashell shape, spiraled noodle, corkscrew-shaped macaroni, star-shaped pasta and bow tie pasta. 

Atrium Café, located inside the Legend Hotel Saigon in District 1, appreciates the artistic side of pasta creation and is offering a variety of artfully prepared a la carte dishes such as spaghetti marinara, and spaghetti alla bolognaise or alla napolitana. Prices range from VND160,000 to VND240,000. Be sure to ask for a glass of Italian red wine to accompany the dish.
