Due to the volatile spring weather, we should eat foods containing vitamins A, E and B2 and vegetables containing vitamin C.

Practitioners of traditional Eastern medicine say these “spring foods” beautify the skin and nourish the spleen.

Frog and pig kidney soup

For women who have recently given birth or adults with depression, frog and pig kidney soup will clean the blood, remove wrinkles and nourish the skin. However, people with digestive problems should not eat this soup.

De-bone 60g of frog meat and cut two pork kidneys in half. Remove the sinew from the kidneys. Place these meats along with 12g of swimming bladder and 15g of câu k^ t^ (Chinese wolfberries) in a pot and cover in water. Bring to a boil over a high flame then cook on a low flame for an hour. Add oil and season with salt. Eat the soup once a day.

Peach blossom and pig’s leg porridge

Breast-feeding mothers should have this porridge to increase their breast milk output and tonify the skin. This concoction can also help heal burns.

Remove the meat from the bone of one pig’s leg and boil both the bone and separated meat in a pot over a high flame. Remove residue from the top of the pot and simmer on a low flame. Then remove the bone and add 1g of powdered dried peach blossoms to the boil along with 100g of rice. Boil over a low flame until the mixture becomes porridge. Season with soy sauce, salt, minced ginger, spring onions and sesame oil. Serve the porridge hot once every two days.

Soup with beef shank

Another soup to nourish the blood and skin is beef shank soup. First, scald 250g of beef shank to deodorize. Then scald 10g of Ä"˜Ãƒ o nhân (peach kernel) and remove its skin. Then put these two ingredients in a pot with 100g of ngọc trúc (polygonatum officinale), and two small pieces of ginger and cover with water. Bring to a boil over a high flame and boil for 15 minutes. Then cook over a low flame for three hours. Take the beef out of the pot and slice into small pieces. Season the beef and broth with salt, sugar and soup powder, then enjoy.
