Michelin-Chef Jerome Brochot plates up inventive French fare
The man who delighted the culinary world by turning leftover hay into sherbet is about to give Ho Chi Minh City a lesson in cutting-edge Gallic cuisine. Michelin-star chef Jerome Brochot will exhibit his creative bend with a Burgundy-inspired menu at the Caravelle Hotel's Reflections Restaurant from August 8 to 12.
The 34-year-old Michelin chef grew up on a farm where his ingenuity first came to the attention of critics. The chef's inventiveness has won him a creative reputation.
For five nights at the Caravelle, chef Brochot will offer a distinctive French menu and two set menus featuring favorite dishes from his restaurant in Montceau-les-Mines.
Foodies in the city will have an opportunity to see chef Brochot in action during a one-time cooking class held on August 8, from 11:30 a.m. to 2 p.m. in the private rooms of Reflections Restaurant.
Participants in the Master Cooking Class will learn how to prepare three unique dishes: farmers guinea fowl glazed with its juices, spiced guinea fowl sausage, with crunchy green asparagus and beans; beef tenderloin, butter-search with duck liver and bone marrow, and pan juice drizzled macaroni gratin; and Quercy-style lamb rack and loin on garlic comfit, with sweet pepper stew pastille.
The cooking class is priced at VND980,000 and includes a flute of Taittinger Champagne, a light tasting menu and desserts.
