Chef Jerome Brochot will introduce his Burgundy-inspired menu at the Caravelle hotel's Reflections restaurant from August 8 to 12.
The 34-year-old gourmet chef runs "Le France" in Montceau-les-Mines, using only ingredients grown on his parents' farm. Brochot received one Michelin star for his inventiveness in interpretations of regional specialties.
During his five nights at the Caravelle, Brochot will create a special French menu and two set menus featuring favorite dishes from his restaurant.
On August 8, Brochot will be also host a cooking class where participants will learn to prepare three dishes: farmers guinea fowl, spiced guinea fowl meat sausage with crunchy green asparagus and beans; beef tenderloin with macaroni gratin; and rack of lamb and loin on garlic comfit, with sweet pepper stew.
The cooking class which will run from 11:30 a.m. to 2p.m. is priced at VND980,000 and includes a flute of Taittinger Champagne, a light tasting menu and desserts.
